Recipe: Green Smoothie

I've always been wary of "green smoothies". Vegetables? In my fruit smoothie? Are you crazy? Turns out, it's not such a wild idea. This is the perfect way to sneak a serving of veggies into breakfast. The spinach lends the smoothie a fresh, minty color (but no weird taste!), and the fruit and yogurt combine to make a wonderfully thick and naturally sweet smoothie base.

You'll need:
1 cup watermelon cubes
1/3 cup Greek yogurt
3/4 cup fresh spinach
A dash of orange juice
1 cup frozen mango chunks (I got mine from Trader Joe's)
Ice to taste (I used about 5 cubes)

This recipe makes two medium sized cups or one large cup.

Combine the spinach, watermelon, Greek yogurt, and orange juice in a blender and blend until smooth. Add the mango chunks and blend until smooth. Add the ice and (again!) blend until smooth. Enjoy!
